Sage Butternut Squash Gratin is a heartwarming dish that combines the natural sweetness of butternut squash with the aromatic flavor of sage, creating a comforting meal perfect for any occasion.

  • 1 medium butternut squash (about 2 lbs), peeled and sliced into 1/4-inch rounds
  • 1 cup heavy cream
  • 1 cup Gruyère cheese, shredded
  • 6 fresh sage leaves, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly spray an oven-safe baking dish with nonstick cooking spray.
  2. In a skillet over medium heat, melt 2 tablespoons of butter. Sauté minced garlic and chopped sage until fragrant (about 2 minutes).
  3. Layer half of the sliced butternut squash in the prepared baking dish. Pour half of the heavy cream mixture over it and sprinkle half of the Gruyère cheese on top.
  4. Repeat layering with the remaining squash, cream mixture, and finish with the remaining cheese.
  5. Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 15-20 minutes until bubbly and golden brown.
