- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 4 cloves fresh garlic, minced
- 1 medium onion, sliced
- 1 cup creamy peanut butter
- 1/3 cup low-sodium soy sauce
- 1 cup coconut milk
- 2 tbsp honey
- Place the chicken breasts in the bottom of the slow cooker.
- Add minced garlic and sliced onion on top of the chicken.
- In a bowl, whisk together peanut butter, soy sauce, coconut milk, and honey until smooth.
- Pour the sauce mixture over the chicken and vegetables, gently stirring to combine.
- Cover and cook on low for 6 hours or high for 3 hours until the chicken is tender.
