Ingredients

  • 8 cups stale bread cubes (sourdough or French)
  • 1/2 cup unsalted butter
  • 1 medium onion, diced
  • 2 cups celery, chopped
  • 1/4 cup fresh thyme, chopped
  • 1/4 cup fresh sage, chopped
  • 3 cups low-sodium chicken broth
  • 2 large eggs, beaten
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. If using fresh bread, cube it and let it sit out for an hour to slightly dry.
  3. In a large skillet over medium heat, melt the butter. Add onions and celery; sauté until soft (about 5 minutes).
  4. In a large bowl, mix stale bread with sautéed vegetables, fresh herbs, salt, and pepper.
  5. Pour in chicken broth until moistened but not soggy. Add beaten eggs and mix well.
  6. Transfer to a greased baking dish and bake uncovered for 30-40 minutes until golden brown.

Notes

  • This stuffing can be prepared a day in advance and baked just before serving.
