  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 1 medium onion, diced
  • 2 tsp cumin
  • 1 can (4 oz) diced green chiles
  • 4 cups low-sodium chicken broth
  • 2 cans (15 oz each) white beans, drained and rinsed
  • Fresh cilantro, chopped (for garnish)
  • Sour cream (for garnish)

Instructions

  1. Prepare your ingredients by chopping the onion and mincing the garlic.
  2. In a large pot over medium heat, add olive oil and sauté onions until translucent (about 5 minutes). Add minced garlic and cook for an additional minute.
  3. Add chicken breasts to the pot; cook for about 5 minutes until slightly browned.
  4. Stir in cumin, green chiles, white beans, and chicken broth. Bring to a simmer for about 20 minutes.
  5. Remove chicken from the pot; shred with two forks and return to the pot.
  6. Let simmer on low heat for another 10 minutes before serving hot with garnishes.
