Instructions

  1. Finely chop the onion, carrots, and celery. Mince the garlic.
  2. In a large skillet or saucepan, heat olive oil over medium heat.
  3. Add the chopped onion, carrots, and celery to the skillet. Cook until softened, about 5-7 minutes. Stir in the minced garlic and cook for an additional 1 minute.
  4. Increase the heat to medium-high and add the ground beef. Cook until browned, breaking it apart with a spatula.

  6. If using red wine, pour it into the pan, scraping up any browned bits. Allow it to simmer and reduce for about 5 minutes.
  7. Add the crushed tomatoes and beef broth. Stir everything together.
  8. Add oregano, basil, bay leaf, salt, and pepper. Bring the sauce to a simmer.
  9. Lower the heat and let the sauce cook gently for at least 45 minutes. Stir occasionally. Add more broth if it thickens too much.
  10. In a pot of salted boiling water, cook the pasta according to package directions until al dente. Drain.
  11. Remove the bay leaf from the sauce. Toss the cooked pasta in with the sauce, ensuring it’s well-coated.
