Ingredients

¾ cup milk of choice
½ scoop vanilla or unflavored protein powder
2 large eggs
¼ cup all-purpose or oat flour
1 tablespoon maple syrup or sweetener of choice
1 teaspoon vanilla extract
Pinch of salt
Butter or oil for the pan
½ cup fresh strawberries, chopped
2 tablespoons strawberry jam
Optional: Greek yogurt, extra berries, powdered sugar
Instructions
In a blender, combine all crêpe ingredients until smooth. Let the batter rest for 5–10 minutes.
Heat a nonstick pan over medium heat and lightly grease with butter or oil.
Pour in about ¼ cup of batter, swirling to coat the pan in a thin layer. Cook for 1–2 minutes until edges lift, then flip and cook another 30 seconds. Repeat with remaining batter.
In a small bowl, mix strawberries with jam to create the jammy filling.
Fill each crêpe with a spoonful of the strawberry mixture. Fold or roll as desired. Add yogurt, berries, or a dusting of powdered sugar to finish.
