Instructions

  1. If you haven’t already, cook the quinoa according to package instructions and let it cool.
  2. Chop the cucumber, bell peppers, cherry tomatoes, red onion, and parsley.
  3. In a large mixing bowl, combine the cooked quinoa, chickpeas, cucumber, bell peppers, cherry tomatoes, red onion, and parsley.
  4. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  5. Pour the dressing over the salad mixture and toss well to combine.
  6. If desired, sprinkle crumbled feta cheese over the salad and gently mix.
