This easy keto beef soup is made with strips of cabbage instead of noodles. It’s a fun twist on a classic beef soup, with 6 grams net carbs in each bowl.

Ingredients

  • 1 pound Ground Beef
  • 1/2 cup Celery (chopped)
  • 1/2 Red Bell Pepper (Chopped)
  • 1/2 Green Bell Pepper (Chopped)
  • 2 tsp Minced Garlic
  • 1 cup Diced Tomatoes (undrained)
  • 3 cups Cabbage (cut into thin noodle-like pieces)
  • 3 cups Beef Broth
  • 1 tsp Thyme

Instructions

  1. Add the ground beef, onions, bell peppers and celery to a pot over medium high heat. Saute until the beef is browned and the vegetables have softened.
  2. Drain the excess grease.
  3. Reduce the heat to medium, and stir in the thyme and garlic. Saute for 30 seconds.
  4. Pour in the broth and diced tomatoes. Stir to combine.
  5. Bring the mixture to a boil, add in the cabbage, cover and reduce heat to medium low to simmer until the cabbage is tender.
  6. Season with salt and pepper to taste before serving.
