Ingredients
Scale
1 lb Cod fillets (Cut into cubes)
2 tablespoons Olive oil
1 teaspoon Lemon zest
2 tablespoons Fresh lemon juice
1 teaspoon Chili powder
1/2 teaspoon Garlic powder
to taste Salt
to taste Pepper
for garnish Fresh parsley (Chopped)
1/2 cup Sour cream
1/4 cup Mayonnaise
1 teaspoon Dried dill
1 teaspoon Garlic powder
1 teaspoon Onion powder
to taste Salt
to taste Pepper
1 tablespoon Fresh lemon juice
Instructions
Preheat your oven to 400°F (200°C).
In a large bowl, combine the olive oil, lemon zest, lemon juice, chili powder, garlic powder, salt, and pepper. Add the cod cubes and toss gently to coat them evenly in the marinade. Let them marinate for about 15 minutes.
Line a baking sheet with parchment paper. Spread the marinated cod cubes in a single layer on the prepared baking sheet. Bake for 12-15 minutes, or until the cod is cooked through and flakes easily with a fork.
In a separate bowl, mix together the sour cream, mayonnaise, dill, garlic powder, onion powder, salt, pepper, and lemon juice until smooth and well combined. Adjust seasoning to taste.
Once the cod is done, remove it from the oven. Garnish with fresh parsley and serve with the creamy ranch dip on the side.
