- 1 pound ground beef or Italian sausage
- 1 cup diced bell peppers
- 1 cup sliced mushrooms
- 1 small onion, diced
- 1 jar (14 oz) pizza sauce (low-carb if possible)
- 2 cups shredded mozzarella cheese
- 1 teaspoon Italian seasoning
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1/2 cup sliced olives (optional)
- Fresh basil for garnish (optional)
- Preheat your oven to 350°F (175°C).
- In a large skillet over medium heat, cook the ground beef or sausage until browned. Drain excess fat.
- Add the diced bell peppers, sliced mushrooms, and onion to the skillet. Sauté until the vegetables are softened, about 5-7 minutes.
- Stir in the Italian seasoning, garlic powder, salt, and pepper. Mix well to combine.
- Pour in the pizza sauce and stir until the meat and vegetables are evenly coated. Remove from heat.
- In a greased 9×13-inch baking dish, spread half of the meat mixture evenly on the bottom. Sprinkle 1 cup of mozzarella cheese on top.
- Add the remaining meat mixture over the cheese, then top with the remaining mozzarella cheese.
- Place the casserole in the preheated oven and bake for 30-35 minutes or until the cheese is bubbly and golden.
- Once done, remove from the oven and let it cool for a few minutes. Garnish with fresh basil if desired.
