Ingredients

Scale
  • 2 lbs carrots (peeled and cut into even sticks or use small whole carrots for pretty presentation)
  • 2 tablespoons olive oil
  • 3 tablespoons pure maple syrup
  • 1 tablespoon brown sugar
  • 2 cloves garlic (minced)
  • ½ teaspoon ground cinnamon
  • ½ teaspoon salt
  • ¼ teaspoon black pepper (to taste)
  • ½ cup pecans (toasted and chopped)
  • 1 tablespoon butter
  • Fresh thyme or parsley (optional garnish)

Instructions

  1. Prep the Oven: Heat to 400°F (200°C). Line a large baking sheet with parchment for easy cleanup.
  2. Coat the Carrots: In a large bowl, toss carrots with olive oil, maple syrup, brown sugar, garlic, cinnamon, salt, and pepper until evenly coated.
  3. Roast: Spread in a single layer. Roast for 20 minutes, stirring once.
  4. Add Pecans: Sprinkle the pecans over the carrots. Roast another 10–15 minutes until the carrots are tender and edges caramelized.
  5. Finish: Drizzle with melted butter and toss gently. Garnish with thyme or parsley if you like.
