- 1 lb Salmon fillet, skinless and boneless, cut into cubes
- 3 tablespoons Olive oil
- 2 cloves Garlic, minced
- 1 teaspoon Dried oregano
- 1 teaspoon Dried thyme
- 1 teaspoon Paprika
- to taste Salt
- to taste Pepper
- Juice of 1 lemon
- to taste Fresh parsley, chopped (for garnish)
- 1 cup Jasmine rice (or any long-grain rice)
- 2 cups Vegetable or chicken broth
- Zest of 1 lemon
- Juice of 1 lemon
- 1 tablespoon Olive oil
- to taste Salt
- In a bowl, combine 2 tablespoons of olive oil, minced garlic, dried oregano, dried thyme, paprika, salt, pepper, and the juice of 1 lemon. Mix well.
- Add the salmon cubes to the marinade and toss to coat evenly. Let it marinate for at least 15 minutes.
- Preheat a grill pan or skillet over medium-high heat.
- Add the marinated salmon cubes to the pan and cook for about 4-5 minutes on each side, or until the salmon is cooked through and has nice grill marks.
- Remove from heat and sprinkle with fresh chopped parsley for garnish.
- Rinse the jasmine rice under cold water until the water runs clear.
- In a medium saucepan, combine rinsed rice, vegetable or chicken broth, lemon zest, lemon juice, 1 tablespoon of olive oil, and salt. Bring to a boil.
- Once boiling, reduce the heat to low, cover, and let it simmer for about 15-20 minutes, or until the rice is tender and the liquid is absorbed.
- Fluff the rice with a fork before serving.
- Place a serving of lemon rice on a plate and top with the grilled salmon cubes. Garnish with additional parsley and lemon wedges if desired.
