A flavorful dish featuring grilled salmon cubes marinated in Mediterranean herbs served over zesty lemon rice.

Ingredients

  • 1 lb Salmon fillet, skinless and boneless, cut into cubes
  • 3 tablespoons Olive oil
  • 2 cloves Garlic, minced
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried thyme
  • 1 teaspoon Paprika
  • to taste Salt
  • to taste Pepper
  • Juice of 1 lemon
  • to taste Fresh parsley, chopped (for garnish)
  • 1 cup Jasmine rice (or any long-grain rice)
  • 2 cups Vegetable or chicken broth
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 1 tablespoon Olive oil
  • to taste Salt

Instructions

  1. In a bowl, combine 2 tablespoons of olive oil, minced garlic, dried oregano, dried thyme, paprika, salt, pepper, and the juice of 1 lemon. Mix well.
  2. Add the salmon cubes to the marinade and toss to coat evenly. Let it marinate for at least 15 minutes.
  3. Preheat a grill pan or skillet over medium-high heat.
  4. Add the marinated salmon cubes to the pan and cook for about 4-5 minutes on each side, or until the salmon is cooked through and has nice grill marks.
  5. Remove from heat and sprinkle with fresh chopped parsley for garnish.
  6. Rinse the jasmine rice under cold water until the water runs clear.
  7. In a medium saucepan, combine rinsed rice, vegetable or chicken broth, lemon zest, lemon juice, 1 tablespoon of olive oil, and salt. Bring to a boil.
  8. Once boiling, reduce the heat to low, cover, and let it simmer for about 15-20 minutes, or until the rice is tender and the liquid is absorbed.
  9. Fluff the rice with a fork before serving.
  10. Place a serving of lemon rice on a plate and top with the grilled salmon cubes. Garnish with additional parsley and lemon wedges if desired.
