  • 2 pounds chuck roast
  • 1 packet taco seasoning (about 1 ounce)
  • 1 cup low-sodium beef broth
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • Fresh cilantro, lime wedges, and shredded cheese (for topping)

Instructions

  1. Trim excess fat from the chuck roast and cut it into large chunks.
  2. Season the beef chunks generously with taco seasoning.
  3. In a skillet over medium heat, sauté the diced onion until translucent, then add minced garlic for one minute.
  4. Place the seasoned beef in the slow cooker, top with sautéed onions and garlic, and pour in beef broth until just covered.
  5. Cook on low for 8 hours or high for 4 hours until tender.
