- 1 ½ cups granulated sugar
- ½ cup unsalted butter, softened
- 1 cup whole milk
- 3 large eggs
- 1 tablespoon baking powder
- ½ teaspoon salt
- 1 teaspoon vanilla extract
- 2 cups fresh blueberries (plus extra for garnish)
- 1 cup heavy cream
- 2 tablespoons powdered sugar (for frosting)
- Zest of 1 lemon (optional, for added flavor)
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a bowl, whisk together the flour, baking powder, and salt.
- In a separate large bowl, beat the softened butter and granulated sugar together until light and fluffy.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Gradually add the dry ingredients to the wet mixture, alternating with the milk. Mix until just combined.
- Gently fold in the fresh blueberries, being careful not to break them.
- Pour the batter evenly into the prepared cake pans.
- Place the pans in the preheated oven and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Remove the cakes from the oven and let them cool in the pans for 10 minutes before transferring to wire racks to cool completely.
- While the cakes cool, whip the heavy cream with powdered sugar until soft peaks form.
- Once cooled, place one cake layer on a serving platter. Spread a layer of whipped cream on top, then place the second layer on top.
