Nova Scotia Blueberry Cream Cake is a delightful dessert that combines the sweetness of blueberries with a rich cream frosting.

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • ½ cup unsalted butter, softened
  • 1 cup whole milk
  • 3 large eggs
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 cups fresh blueberries (plus extra for garnish)
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar (for frosting)
  • Zest of 1 lemon (optional, for added flavor)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a bowl, whisk together the flour, baking powder, and salt.
  3. In a separate large bowl, beat the softened butter and granulated sugar together until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the milk. Mix until just combined.
  6. Gently fold in the fresh blueberries, being careful not to break them.
  7. Pour the batter evenly into the prepared cake pans.
  8. Place the pans in the preheated oven and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  9. Remove the cakes from the oven and let them cool in the pans for 10 minutes before transferring to wire racks to cool completely.
  10. While the cakes cool, whip the heavy cream with powdered sugar until soft peaks form.
  11. Once cooled, place one cake layer on a serving platter. Spread a layer of whipped cream on top, then place the second layer on top.
  12. Frost the top of the cake with the remaining whipped cream and garnish with extra blueberries and lemon zest, if desired.

Notes

  • This cake can be stored in the refrigerator for up to 3 days.
  • For a richer flavor, use fresh lemon juice in the frosting.
