  • 8 ounces pasta (penne or rotini work well)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 3 cups chicken broth
  • 1 cup shredded cheddar cheese
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the sliced smoked sausage to the pan and cook until browned, about 5-7 minutes.
  3. Add the diced onion and bell pepper to the pan. Cook for an additional 3-4 minutes until the vegetables are softened.
  4. Stir in the minced garlic and cook for 1 minute until fragrant.
  5. Add the pasta to the skillet, followed by the chicken broth, Italian seasoning, paprika, salt, and pepper. Stir everything together.
  6. Increase the heat to high and bring the mixture to a boil. Once boiling, reduce the heat to low and cover the skillet. Let it simmer for 12-15 minutes, or until the pasta is al dente.
  7. Remove the skillet from the heat. Slowly stir in the heavy cream and shredded cheddar cheese until everything is well combined and the cheese is melted.
  8. Taste the dish and adjust the seasoning if needed.
  9. Sprinkle fresh parsley on top for garnish before serving.
