4 bone-in, skin-on chicken thighs
1 pound Brussels sprouts, halved
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon dried thyme
1 teaspoon salt
½ teaspoon black pepper
1 lemon, sliced
Fresh parsley, chopped (for garnish)
Instructions
Preheat your oven to 425°F (220°C).
Pat the chicken thighs dry with paper towels.
In a small bowl, mix together the garlic powder, paprika, thyme, salt, and black pepper. Rub this seasoning mixture all over the chicken thighs.
In a large mixing bowl, combine the halved Brussels sprouts with olive oil. Toss them until they are evenly coated.
In a large oven-safe skillet, arrange the seasoned chicken thighs skin-side up. Scatter the Brussels sprouts around the chicken. Add lemon slices on top.
Place the skillet in the preheated oven and roast for 35-40 minutes.
If desired, switch the oven to broil for an additional 3-5 minutes.
Remove the skillet from the oven. Let it rest for a few minutes before garnishing with fresh parsley.
