One Pan Chicken Thighs and Brussels Sprouts: An Incredible Ultimate Recipe

Ingredients

Scale
  • 4 bone-in, skin-on chicken thighs
  • 1 pound Brussels sprouts, halved
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 lemon, sliced
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat the chicken thighs dry with paper towels.
  3. In a small bowl, mix together the garlic powder, paprika, thyme, salt, and black pepper. Rub this seasoning mixture all over the chicken thighs.
  4. In a large mixing bowl, combine the halved Brussels sprouts with olive oil. Toss them until they are evenly coated.
  5. In a large oven-safe skillet, arrange the seasoned chicken thighs skin-side up. Scatter the Brussels sprouts around the chicken. Add lemon slices on top.
  6. Place the skillet in the preheated oven and roast for 35-40 minutes.
  7. If desired, switch the oven to broil for an additional 3-5 minutes.
  8. Remove the skillet from the oven. Let it rest for a few minutes before garnishing with fresh parsley.
