1 pound boneless, skinless chicken thighs or breasts
1 cup long-grain rice
1 can (20 ounces) pineapple chunks in juice
1 cup chicken broth
1 bell pepper, diced (any color)
1 cup frozen peas
3 tablespoons soy sauce
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon ginger powder
Salt and pepper to taste
Green onions, sliced (for garnish)
Sesame seeds (for garnish)
Instructions
Season the chicken with salt, pepper, garlic powder, and ginger powder. Let it marinate for about 10 minutes.
In a large skillet or pan, heat the olive oil over medium-high heat.
Add the chicken to the pan and cook for about 5-7 minutes until browned on both sides. Remove the chicken from the pan and set it aside.
In the same pan, add the diced bell pepper and cook for 2-3 minutes until softened.
Stir in the rice and cook for another minute, allowing it to absorb the flavors.
Pour in the pineapple chunks (with their juice), chicken broth, and soy sauce. Stir well to combine.
Place the seared chicken back into the pan, nestling it into the rice mixture.
Cover the pan with a lid and reduce the heat to low. Allow it to simmer for about 20 minutes or until the rice is cooked and has absorbed most of the liquid.
In the last 5 minutes of cooking, stir in the frozen peas and cover again to heat through.
Once cooked, fluff the rice with a fork and garnish with sliced green onions and sesame seeds. Serve hot.

Swap chicken for shrimp or pork for a different taste.
