12 ounces pasta (spaghetti or penne)
3 cups vegetable broth
1 cup fresh spinach leaves
1 cup mushrooms, sliced (button or cremini)
1 medium onion, diced
3 cloves garlic, minced
1 teaspoon olive oil
1 teaspoon Italian seasoning
½ teaspoon salt
¼ teaspoon black pepper
½ cup heavy cream (optional for a creamy sauce)
Grated Parmesan cheese (for serving)
Fresh basil leaves (for garnish)
Instructions
In a large pot, heat olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
Add the sliced mushrooms to the pot and cook for about 5-7 minutes, or until they are tender and have released their moisture.
Pour in the vegetable broth and bring to a boil. Once boiling, add the pasta, Italian seasoning, salt, and pepper. Stir well to ensure the pasta is submerged in the broth.
Reduce the heat to a simmer and cover the pot. Cook according to the pasta package instructions, usually about 10-12 minutes, stirring occasionally.
When the pasta is just about done, stir in the fresh spinach leaves. Cook for an additional 2-3 minutes until the spinach wilts.
If you prefer a creamy sauce, stir in the heavy cream at this stage. Allow it to heat through for another minute.
Once the pasta is cooked and the sauce has thickened slightly, remove the pot from heat. Taste and adjust seasoning if necessary.
Serve the pasta hot, topped with grated Parmesan cheese and fresh basil leaves for a burst of flavor.
