- 4 large onions (yellow or sweet)
- ½ cup unsalted butter
- 2 tablespoons olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons fresh thyme (or 1 tablespoon dried thyme)
- 2 tablespoons fresh rosemary (or 1 tablespoon dried rosemary)
- 1 tablespoon garlic, minced
- ½ cup grated Parmesan cheese (optional)
- Fresh parsley for garnish (optional)
- Preheat your oven to 375°F (190°C).
- Peel and slice the onions into thin rings.
- In a large skillet, melt the butter and olive oil over medium heat.
- Add the sliced onions to the skillet. Sauté for about 10 minutes until they start to soften.
- Sprinkle salt, pepper, thyme, rosemary, and garlic over the onions. Stir well to combine.
- Pour the onion mixture into a greased baking dish, spreading it evenly.
- If using, sprinkle the grated Parmesan cheese over the top of the onions.
- Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.
- Remove the foil and bake for an additional 10-15 minutes, or until the onions are tender and have a golden brown crust.
- Remove from the oven and let it cool slightly. Garnish with fresh parsley if desired.
