Overnight Chia Seed Pudding with Berry Compote: An Amazing Ultimate Recipe

Ingredients

Scale
  • 1/2 cup chia seeds
  • 2 cups almond milk (or any milk of choice)
  • 2 tablespoons maple syrup (or honey)
  • 1 teaspoon vanilla extract
  • A pinch of salt
  • 2 cups mixed berries (strawberries, blueberries, raspberries)
  • 1/4 cup maple syrup (or sugar)
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract

Instructions

  1. In a bowl, combine chia seeds, almond milk, maple syrup, vanilla extract, and salt. Stir well to combine.
  2. Let it sit for about 5 minutes, then stir again to prevent clumping.
  3. Cover the bowl and place it in the refrigerator for at least 4 hours or overnight to thicken.
  4. In a small saucepan, combine mixed berries, maple syrup, lemon juice, and vanilla extract.
  5. Heat over medium heat, stirring occasionally until the berries break down and the mixture thickens, about 10-15 minutes.
  6. Remove from heat and let it cool to room temperature before using.
  7. When ready to serve, spoon the chia pudding into bowls or jars and top with the berry compote.
  8. Add fresh mint leaves, additional berries, or a sprinkle of nuts for an extra touch.
