  • 4 cups chopped romaine lettuce
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, finely chopped
  • 1/2 cup shredded Parmesan cheese

  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard

Instructions

  1. Wash all vegetables thoroughly. Chop the romaine lettuce into bite-sized pieces and place it in a large mixing bowl.
  2. Halve the cherry tomatoes, dice the cucumber, and finely chop the red onion. Add these to the bowl with the romaine.
