  • 8 oz Spaghetti
  • 1/4 Cup Extra Virgin Olive Oil
  • 4 Garlic Cloves, Thinly Sliced
  • 1/2 Teaspoon Red Pepper Flakes
  • 1/4 Cup Fresh Parsley, Chopped
  • Salt, to Taste
  • Grated Parmesan Cheese (Optional)

Instructions

  1. Bring a large pot of well-salted water to a rolling boil. Add spaghetti and cook until al dente. Reserve about 1/2 cup of pasta water before draining.
  2. While pasta cooks, heat olive oil in a large skillet over medium heat until shimmering. Add sliced garlic and cook for 1-2 minutes until light golden, swirling the pan. Do not let it burn.
  3. Immediately add red pepper flakes and 2 tablespoons of reserved pasta water to the skillet.
  4. Add drained spaghetti to the skillet. Toss vigorously to coat.
  5. Add another 1/4 cup of pasta water and continue tossing until a slightly creamy sauce forms. Add more pasta water if needed.
  6. Remove from heat. Stir in fresh parsley and a pinch of salt. Toss to combine.
  7. Serve immediately, optionally topped with grated Parmesan cheese.
