12 ounces pasta (your choice, such as penne or spaghetti)
2 tablespoons olive oil
4 cloves garlic, minced
1 bunch kale or Swiss chard, chopped
1 cup vegetable broth
½ teaspoon red pepper flakes (optional)
Salt and pepper to taste
¼ cup grated Parmesan cheese (optional)
Fresh lemon juice (for serving)
Instructions
In a large pot of salted boiling water, cook the pasta according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.
In the same pot, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
Stir in the chopped winter greens and cook for 3-5 minutes until wilted and tender.
Add the vegetable broth and red pepper flakes (if using). Bring to a simmer and let it cook for 2-3 minutes.
Return the drained pasta to the pot and toss everything together. If the mixture seems dry, add reserved pasta water a little at a time until you reach the desired consistency.
Season with salt and pepper to taste. Stir in the grated Parmesan cheese if desired.
Remove from heat and drizzle with fresh lemon juice before serving.
Notes
Consider adding cooked chicken, shrimp, or chickpeas for extra protein.
