1 pound boneless, skinless chicken breasts
1 cup fresh pineapple, diced
1/4 cup soy sauce
2 tablespoons honey
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon ground ginger
1 teaspoon chili powder
1/2 teaspoon salt
1/4 teaspoon black pepper
8 small corn or flour tortillas
1 cup red cabbage, shredded
1/2 cup cilantro, chopped
1 avocado, sliced
Lime wedges, for serving
Instructions
In a bowl, combine soy sauce, honey, olive oil, minced garlic, ground ginger, chili powder, salt, and black pepper. Add the chicken breasts and coat well. Let it marinate for at least 15 minutes.
While the chicken is marinating, chop the fresh pineapple into small pieces. Set aside.
Heat a skillet over medium-high heat. Remove the chicken from the marinade and place it in the skillet. Cook for about 7-10 minutes on each side or until the chicken is cooked through and no longer pink in the center.
In the last few minutes of cooking, add the diced pineapple to the skillet. Stir it with the chicken to allow the flavors to meld.
In a separate pan, warm the tortillas over medium heat for about 30 seconds on each side or until pliable.
Once the chicken is cooked, remove it from the skillet and let it rest for a few minutes. Then, slice it into thin strips.
On each tortilla, place a generous portion of the chicken and pineapple mixture. Top with shredded red cabbage, chopped cilantro, and avocado slices.
Squeeze fresh lime juice over the tacos for an extra burst of flavor.
