4 chicken thighs (bone-in, skin-on)
4 chicken drumsticks
1/4 cup olive oil
3 cloves garlic, minced
2 tablespoons smoked paprika
1 tablespoon dried oregano
1 tablespoon salt
1 teaspoon black pepper
1 teaspoon red pepper flakes (optional for heat)
Juice of 2 lemons
Fresh parsley, chopped (for garnish)
Instructions
In a bowl, mix together olive oil, minced garlic, smoked paprika, oregano, salt, black pepper, red pepper flakes, and lemon juice.
Place the chicken thighs and drumsticks in a large resealable plastic bag or glass dish. Pour the marinade over the chicken, ensuring it is well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour (or up to overnight for deeper flavor).
Preheat your grill to medium-high heat, ensuring it’s hot before placing the chicken.
Remove the chicken from the marinade and let excess marinade drip off. Place the chicken on the grill, skin side down. Cook for about 5-7 minutes.
Flip the chicken over and continue grilling for another 10-15 minutes, or until the internal temperature reaches 165°F (75°C).
For added flavor and moisture, brush the chicken with leftover marinade during the last few minutes of grilling.
Once cooked, remove the chicken from the grill and let it rest for 5 minutes before serving.
Sprinkle with fresh parsley for a pop of color and added flavor.
