  • 3 lbs chuck roast
  • 4 medium carrots, chopped
  • 4 medium Yukon Gold potatoes, quartered
  • 2 medium yellow onions, chopped
  • 2 cups low-sodium beef broth
  • 4 cloves garlic, minced
  • 2 tsp fresh thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 300°F (150°C). In a large Dutch oven, heat olive oil over medium-high heat. Season the chuck roast with salt and pepper; sear for 4-5 minutes on each side until browned.
  2. Remove the roast; add onions and garlic to the pot. Sauté until fragrant (about 2 minutes).
  3. Deglaze the pot with beef broth, scraping up brown bits. Simmer for 2 minutes.
  4. Return the roast to the pot; surround it with carrots and potatoes. Add thyme and bay leaves; pour in enough broth to nearly submerge the ingredients.
  5. Cover and bake for about 3 hours or until meat is fork-tender.
  6. Let rest before slicing; serve with juices over the meat.
