1 pound Red fish fillets, cut into strips
1 cup Breadcrumbs
1/2 cup All-purpose flour
2 Large eggs, beaten
1 teaspoon Paprika
1 teaspoon Garlic powder
1 teaspoon Salt
1/2 teaspoon Black pepper
as needed Vegetable oil, for frying
2 cups Cooked rice (white or brown)
1 cup Mixed vegetables (bell peppers, carrots, peas)
as needed Fresh parsley, chopped (for garnish)
1/2 cup Mayonnaise
2 tablespoons Pickles, finely chopped
1 tablespoon Lemon juice
1 teaspoon Dijon mustard
to taste Salt and pepper to taste
Instructions
Prepare the Tartar Dressing: In a bowl, combine the mayonnaise, chopped pickles, lemon juice, and Dijon mustard. Mix until well combined. Season with salt and pepper to taste. Set aside in the refrigerator.
Prepare the Fish Strips: In a shallow dish, combine the flour, paprika, garlic powder, salt, and pepper. In another shallow dish, place the beaten eggs. In a third shallow dish, place the breadcrumbs. Dip each fish strip first into the flour mixture, then into the beaten eggs, and finally into the breadcrumbs, ensuring they are well coated.
Cook the Fish Strips: Heat vegetable oil in a large skillet over medium heat. Once the oil is hot, carefully add the breaded fish strips in batches, frying until golden brown and cooked through, about 3-4 minutes per side. Remove the fish strips from the skillet and place them on a paper towel-lined plate to drain excess oil.
Assemble the Rice Bowls: In each serving bowl, place a portion of cooked rice. Top with mixed vegetables and the crispy fish strips. Drizzle with the creamy tartar dressing and garnish with chopped parsley.
