Roasted Delicata Squash is a delightful and versatile addition to any autumn menu, offering a sweet, creamy flesh and a caramelized exterior that enhances its natural sweetness. This easy-to-prepare dish is perfect for both novice and experienced cooks, adding warmth and elegance to your meals.

Ingredients

Scale
  • 2 medium delicata squash
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika (optional)
  • Fresh herbs (optional, for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Carefully slice the delicata squash in half lengthwise and scoop out the seeds.
  3. Cut each half into 1/2-inch thick half-moon slices. The skin is edible.
  4. In a large mixing bowl, combine the squash slices with olive oil, salt, black pepper, garlic powder, and smoked paprika. Toss until well coated.
  5. Spread the seasoned squash evenly on a baking sheet lined with parchment paper.
  6. Place the baking sheet in the preheated oven and roast for 25–30 minutes, tossing halfway through for even cooking.
  7. Check for doneness; the squash should be golden brown and tender when pierced with a fork.
  8. Optionally, sprinkle fresh herbs over the squash before serving.

Notes

  • Choose ripe delicata squash with firm, smooth skin.
  • Experiment with seasonings like cinnamon or chili powder.
  • Serve immediately after roasting for the best flavor and texture.
