1 pizza dough (store-bought or homemade)
1 cup red grapes, halved
2 tablespoons olive oil
1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)
1 cup mozzarella cheese, shredded
½ cup goat cheese, crumbled
¼ teaspoon salt
¼ teaspoon black pepper
1 tablespoon balsamic glaze (for drizzling)
Fresh arugula (for topping, optional)
Instructions
Preheat your oven to 475°F (245°C).
In a bowl, toss the halved grapes with olive oil, thyme, salt, and pepper until well coated.
Spread the grapes on a baking sheet lined with parchment paper. Roast in the preheated oven for about 15 minutes, or until they are soft and slightly caramelized.
While the grapes are roasting, roll out your pizza dough on a floured surface to your desired thickness.
Transfer the rolled-out dough to a pizza stone or baking sheet. Sprinkle mozzarella cheese evenly across the surface, followed by the roasted grapes and crumbled goat cheese.
Place the assembled pizza in the oven. Bake for 10-12 minutes, or until the crust is golden brown and the cheese is bubbly.
Once the pizza is out of the oven, drizzle with balsamic glaze for an extra layer of flavor.
If desired, top with fresh arugula for a peppery contrast and added freshness.
