8 ounces of whole wheat pasta
2 cups of cherry tomatoes, halved
1 zucchini, diced
1 bell pepper, diced (any color)
1 red onion, sliced
3 tablespoons of olive oil
1 teaspoon of garlic powder
1 teaspoon of dried oregano
Salt and pepper, to taste
1 cup of feta cheese, crumbled
Fresh basil leaves, for garnish
Instructions
Preheat your oven to 400°F (200°C).
In a large bowl, combine the cherry tomatoes, zucchini, bell pepper, and red onion.
Drizzle the vegetables with olive oil, then sprinkle with garlic powder, dried oregano, salt, and pepper. Toss to coat evenly.
Spread the seasoned vegetables on a baking sheet in a single layer. Roast in the preheated oven for about 20-25 minutes, or until tender and slightly caramelized.
While the vegetables are roasting, cook the whole wheat pasta according to package instructions. Drain and set aside.
In a large serving bowl, combine the roasted vegetables and cooked pasta. Gently toss to mix.
Sprinkle crumbled feta cheese over the pasta and vegetables, tossing gently to combine.
Finish with fresh basil leaves for added flavor and presentation.
