4 boneless, skinless chicken breasts
1 cup salsa verde
1 cup shredded pepper jack cheese
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon cumin
Salt and pepper to taste
Fresh cilantro for garnish (optional)
Instructions
Preheat your oven to 375°F (190°C).
Pat the chicken breasts dry with paper towels. Season both sides with garlic powder, onion powder, cumin, salt, and pepper.
In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the seasoned chicken breasts and sear for about 3-4 minutes on each side until golden brown.
Pour the salsa verde over the seared chicken breasts, ensuring they are well coated.
Sprinkle the shredded pepper jack cheese on top of the salsa-covered chicken.
Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
For an extra cheesy topping, switch the oven to broil for the last 2-3 minutes until the cheese is bubbly and lightly browned.
