Salsa Verde Pepper Jack Chicken is an incredible recipe that combines tender chicken with zesty salsa verde and melted pepper jack cheese.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup salsa verde
  • 1 cup shredded pepper jack cheese
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Pat the chicken breasts dry with paper towels. Season both sides with garlic powder, onion powder, cumin, salt, and pepper.
  3. In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the seasoned chicken breasts and sear for about 3-4 minutes on each side until golden brown.
  4. Pour the salsa verde over the seared chicken breasts, ensuring they are well coated.
  5. Sprinkle the shredded pepper jack cheese on top of the salsa-covered chicken.
  6. Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  7. For an extra cheesy topping, switch the oven to broil for the last 2-3 minutes until the cheese is bubbly and lightly browned.
  8. Remove from the oven and let it rest for a few minutes. Garnish with fresh cilantro if desired.
  9. Slice the chicken and serve warm.

Notes

  • Adjust seasoning to your taste.
  • Can serve with rice or salad.
