  • For the Macaron Shells:
  • 100g almond flour
  • 100g granulated sugar
  • 105g powdered sugar
  • 100g egg whites (approx. 3 large whites)
  • Red gel or powder food coloring
  • For the Sugar Cookie Buttercream Filling:
  • ½ cup unsalted butter, room temperature
  • ¼ cup granulated sugar
  • 1¼ cup powdered sugar
  • 1 tsp vanilla extract
  • ⅔ tsp almond extract (optional)
  • ½ tbsp milk or heavy cream (optional)
  • For the Royal Icing Decoration:
  • 1½ cups powdered sugar
  • 1 Tbsp meringue powder
  • ~4 Tbsp water
  • Black and yellow gel food coloring

Instructions

  1. Make the Macaron Batter: Sift almond flour, powdered sugar, and granulated sugar together. Whip egg whites to stiff peaks. Gently fold in dry ingredients and red coloring until batter flows like lava.
  2. Pipe & Rest: Pipe small rounds onto parchment-lined trays. Tap to remove air bubbles. Let rest until tops are dry to the touch—about 30 minutes to 1 hour.
  3. Bake: Bake at 300°F (150°C) for 15–18 minutes until set and easy to lift from the paper. Cool completely.
  4. Make the Filling: Beat butter and sugar until fluffy. Add powdered sugar, extracts, and milk as needed for consistency.
  5. Assemble: Pipe buttercream onto half the macaron shells and sandwich with the remaining shells.
  6. Decorate: Mix royal icing until pipeable. Use black and yellow to create Santa belts or faces. Add festive touches like mini hats, eyes, or coconut for snowy trim.

Notes

  • Use gel or powder food coloring; avoid liquid coloring as it can affect batter consistency.
  • Aged egg whites (separated and left to sit for a few hours or overnight) help create a more stable meringue.
  • Ensure your almond flour and powdered sugar are very finely ground and sifted well for smooth shells.
  • Macarons can be stored in an airtight container in the fridge for up to 4–5 days and are best served at room temperature.
  • Filled macarons can be frozen for up to 1 month; thaw overnight in the fridge.
