1 lb flank steak
2 tbsp olive oil
4 cloves garlic, minced
3 tbsp lime juice (freshly squeezed)
1 tsp ground cumin
8 corn or flour tortillas
½ cup fresh cilantro, chopped
½ cup salsa (your choice)
Instructions
Marinate the flank steak: In a bowl, mix olive oil, garlic, lime juice, and cumin. Place the steak in a resealable plastic bag or shallow dish and pour the marinade over it. Seal or cover and refrigerate for at least one hour (or overnight).
Preheat the grill: Heat your grill to medium-high (around 400°F). Let the marinated steak come to room temperature.
Grill the steak: Remove excess marinade from the steak and grill for about 5-7 minutes per side for medium-rare. Look for nice grill marks.
Let it rest: Transfer the grilled steak to a cutting board and let it rest for five minutes before slicing.
Slice against the grain: Cut the steak into thin strips against the grain for maximum tenderness.
Assemble tacos: Warm tortillas on the grill or in a skillet, fill with sliced steak, top with cilantro and salsa, and add extra lime juice if desired.
