  • 1 cup fresh or frozen cranberries
  • 1 cup orange juice (freshly squeezed is best)
  • 1 tablespoon orange zest
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • Fresh parsley for garnish (optional)
  • Cooked rice or quinoa for serving (optional)

Instructions

  1. Season the chicken breasts with salt, pepper, garlic powder, and onion powder on both sides.
  2. In a large skillet, heat the olive oil over medium-high heat.
  3. Add the seasoned chicken breasts to the skillet. Cook for about 5-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add the cranberries, orange juice, orange zest, and honey. Stir to combine and bring to a simmer.
  5. Cook the sauce for about 5-10 minutes until the cranberries burst and the sauce thickens slightly.
  6. Return the cooked chicken to the skillet, spooning the sauce over the top. Cook for an additional 2-3 minutes to allow the flavors to meld.
  7. Remove from heat and garnish with fresh parsley if desired.
  8. Serve the chicken with the cranberry-orange sauce over cooked rice or quinoa.
