A delightful and easy slow cooker dish featuring tender chicken thighs marinated in a sweet and tangy ginger honey sauce, paired with colorful vegetables.

  • 2 lbs Chicken thighs, boneless and skinless
  • 1 cup Carrots, sliced
  • 1 cup Bell peppers, chopped
  • 1 cup Broccoli florets
  • 1 cup Onion, chopped
  • 1/2 cup Honey
  • 1/4 cup Soy sauce
  • 1/4 cup Rice vinegar
  • 2 tablespoons Fresh ginger, minced
  • 4 cloves Garlic, minced
  • 1 tablespoon Sesame oil
  • 2 teaspoons Cornstarch
  • 2 teaspoons Water
  • Salt and pepper to taste
  • Sesame seeds for garnish (optional)
  • Green onions, sliced for garnish (optional)

Instructions

  1. Season the chicken thighs with salt and pepper. Place them in the bottom of the slow cooker.
  2. Layer the sliced carrots, chopped bell peppers, broccoli florets, and chopped onion over the chicken in the slow cooker.
  3. In a separate bowl, whisk together the honey, soy sauce, rice vinegar, minced ginger, minced garlic, and sesame oil until well combined.
  4. Pour the sauce over the chicken and vegetables in the slow cooker, ensuring everything is well coated.
  5. Cover the slow cooker and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
  6. About 30 minutes before serving, mix the cornstarch and water in a small bowl to create a slurry. Stir the slurry into the slow cooker to thicken the sauce. Replace the lid and cook for an additional 30 minutes.
  7. Once done, check the seasoning and adjust with more salt or pepper if needed. Serve the chicken and vegetables over rice or noodles, garnished with sesame seeds and sliced green onions if desired.
