- 4 boneless, skinless chicken breasts
- 1 cup long-grain white rice
- 2 cups chicken broth
- 2 medium lemons (juiced and zested)
- 3 cloves garlic (minced)
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ cup fresh parsley (chopped, for garnish)
- 1 cup frozen peas (optional)
