Slow Cooker Lemon Herb Chicken and Rice is a comforting and flavorful dish that combines tender chicken with zesty lemon and herbs over fluffy rice.

  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 2 medium lemons (juiced and zested)
  • 3 cloves garlic (minced)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup fresh parsley (chopped, for garnish)
  • 1 cup frozen peas (optional)
  • 1 tablespoon olive oil

Instructions

  1. Lightly grease the slow cooker with olive oil to prevent sticking.
  2. Place the chicken breasts at the bottom of the slow cooker.
  3. In a medium bowl, combine the chicken broth, lemon juice, lemon zest, minced garlic, thyme, oregano, salt, and black pepper. Stir well to combine.
  4. Pour the rice over the chicken in the slow cooker.
  5. Carefully pour the broth mixture over the chicken and rice, ensuring even coverage.
  6. Cover the slow cooker and cook on low for 4-6 hours or on high for 2-3 hours, until the chicken is cooked through and the rice is tender.
  7. If using, stir in the frozen peas during the last 30 minutes of cooking.
  8. Once done, shred the chicken with two forks right in the slow cooker and stir to combine with the rice.
  9. Sprinkle chopped fresh parsley on top before serving for added flavor and color.
  10. Dish out the chicken and rice onto plates and enjoy!
