2 cups diced apples (preferably Granny Smith)
1 cup seedless grapes, halved
1 cup diced celery
1 cup toasted walnuts or smoked almonds
1 cup cooked and shredded smoked chicken (optional)
1 cup plain Greek yogurt
2 tablespoons honey
1 tablespoon lemon juice
1 teaspoon cinnamon
Salt and pepper to taste
Fresh lettuce leaves for serving
Instructions
Begin by washing and dicing the apples and celery. Halve the grapes and set aside.
In a dry skillet over medium heat, toast the walnuts or smoked almonds until they are golden brown and fragrant. This should take about 5-7 minutes. Allow them to cool.
In a separate bowl, mix the Greek yogurt, honey, lemon juice, cinnamon, salt, and pepper until well combined.
In a large mixing bowl, add the diced apples, halved grapes, diced celery, and toasted nuts. If using, include the shredded smoked chicken as well.
Pour the yogurt dressing over the salad mixture and toss gently until everything is well coated.
Let the salad sit in the refrigerator for about 10-15 minutes to allow the flavors to meld together.
Line a serving dish with fresh lettuce leaves and spoon the salad mixture on top.
