  • 4 cups vegetable broth
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • ½ teaspoon ground coriander
  • 1 cup fresh spinach, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Lemon wedges (for serving)

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion, carrots, and celery to the pot. Sauté for 5-7 minutes until the vegetables are softened.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add the smoked paprika, ground cumin, and ground coriander. Stir for about 30 seconds to toast the spices.
  5. Pour in the rinsed red lentils and vegetable broth. Bring the mixture to a boil.
  6. Reduce heat and let the soup simmer for 20-25 minutes, or until the lentils are tender.
  7. Stir in the chopped spinach and cook for an additional 5 minutes until wilted.
  8. Taste and adjust seasoning with salt and pepper as needed.
  9. For a smoother texture, you can blend the soup using an immersion blender or in batches in a regular blender. This step is optional, depending on your texture preference.
  10. Ladle the soup into bowls and serve with lemon wedges on the side for added brightness.
