  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon gochujang (Korean chili paste)
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • 1 teaspoon black pepper
  • 1 teaspoon sesame oil
  • 2 cups cooked rice (white or brown)
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame seeds
  • 1/4 cup green onions, chopped
  • 1/2 cup sour cream
  • 12 tablespoons chipotle in adobo sauce
  • Juice of 1 lime
  • Salt to taste
  • Optional toppings: Sliced avocado, Fresh cilantro, Lime wedges

Instructions

  1. In a large skillet, heat sesame oil over medium-high heat. Add the ground beef and cook until browned, breaking it apart with a spatula. Drain excess fat.
  2. Stir in soy sauce, honey, gochujang, garlic powder, ginger powder, and black pepper. Cook for an additional 3-5 minutes until the beef is well coated and heated through.
  3. In a medium bowl, combine the cooked rice with rice vinegar and sesame seeds. Mix well.
  4. In a small bowl, whisk together sour cream, chipotle in adobo sauce, lime juice, and a pinch of salt until smooth. Adjust chipotle for desired spice.
  5. Divide the seasoned rice among bowls. Top generously with the spicy beef mixture.
  6. Drizzle with chipotle lime crema and garnish with chopped green onions and any additional toppings like sliced avocado or fresh cilantro.
  7. Serve warm.
