4 large onions
1 cup cooked rice (or quinoa for a gluten-free option)
1 lb ground meat (beef, chicken, or turkey)
1 cup diced tomatoes (canned or fresh)
1 small onion, finely chopped (for stuffing)
2 cloves garlic, minced
1 tablespoon olive oil
1 teaspoon dried oregano
1 teaspoon paprika
Salt and pepper to taste
2 cups tomato sauce
Fresh parsley, for garnish
Instructions
Preheat your oven to 375°F (190°C) to prepare for baking.
Prepare the Onions: Cut the tops off the large onions and carefully scoop out the insides to create hollow shells. Set the removed onion flesh aside.
Cook the Filling: In a skillet, heat olive oil over medium heat. Add the finely chopped onion and garlic, cooking until translucent. Then, add the ground meat, cooking until browned. Stir in the cooked rice, diced tomatoes, oregano, paprika, salt, and pepper. Mix until well combined.
Stuff the Onions: Spoon the filling into each hollowed onion, pressing gently to pack it in. Place the stuffed onions upright in a baking dish.
Add Tomato Sauce: Pour the tomato sauce over the stuffed onions, ensuring they are well-covered. Cover the dish with foil and bake for about 30-35 minutes. Remove the foil and bake for an additional 10-15 minutes, allowing the tops to brown slightly.
