Deliciously marinated chicken cubes cooked to perfection and served with a refreshing ginger lime cream.

  • 1 lb Boneless, skinless chicken breasts (cut into bite-sized cubes)
  • 1/4 cup Soy sauce
  • 2 tablespoons Honey
  • 2 tablespoons Sesame oil
  • 1 tablespoon Rice vinegar
  • 1 tablespoon Cornstarch
  • 1 tablespoon Sesame seeds
  • 2 stalks Green onions (chopped for garnish)
  • 1/2 cup Sour cream
  • 1 tablespoon Fresh ginger (grated)
  • 1 tablespoon Lime juice
  • 1 teaspoon Lime zest
  • 1 teaspoon Honey
  • Salt and pepper (to taste)

Instructions

  1. In a large mixing bowl, combine soy sauce, honey, sesame oil, rice vinegar, and cornstarch. Whisk until well combined.
  2. Add the chicken cubes to the marinade, ensuring they are evenly coated. Cover and refrigerate for at least 30 minutes (or up to 2 hours for more flavor).
  3. Heat a large skillet or wok over medium-high heat. Add a little sesame oil if desired.
  4. Once hot, add the marinated chicken cubes in a single layer. Cook for about 5-7 minutes, turning occasionally, until the chicken is golden brown and cooked through.
  5. Sprinkle sesame seeds over the chicken in the last minute of cooking, allowing them to toast slightly.
  6. In a small bowl, mix together sour cream, grated ginger, lime juice, lime zest, and honey. Stir until smooth. Season with salt and pepper to taste.
  7. Transfer the cooked chicken cubes to a serving plate. Drizzle with ginger lime cream and garnish with chopped green onions.
