  • 4 large sweet onions (such as Vidalia or Walla Walla)
  • 3 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 2 teaspoons smoked paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon brown sugar
  • 1 tablespoon fresh thyme (optional)

Instructions

  1. Peel the onions and slice them into thick rings, about ½ inch thick.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Once the oil is hot, add the sliced onions to the skillet.
  4. Sprinkle the smoked paprika, salt, black pepper, and brown sugar over the onions. Stir to coat evenly.
  5. Sauté the onions for about 15-20 minutes, stirring occasionally until they become translucent and start to caramelize.
  6. Pour in the balsamic vinegar and continue cooking for an additional 5-10 minutes, allowing the flavors to meld and the onions to become deeply caramelized.
  7. If using, add the fresh thyme during the last minute of cooking for an aromatic touch.
  8. Once the onions are perfectly caramelized, remove them from the heat and set them aside.
