  • 1 egg
  • 1/2 cup breadcrumbs
  • 2 cloves garlic, minced
  • 2 tablespoons chopped parsley
  • Salt and pepper to taste
  • Olive oil spray
  • 3 large russet potatoes, peeled and chopped
  • 2 tablespoons butter
  • 1/2 cup milk
  • 3 cups broccoli florets, steamed
  • Gravy or BBQ sauce for drizzling

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine ground turkey, egg, breadcrumbs, minced garlic, chopped parsley, salt, and pepper. Mix gently with your hands until just incorporated.
  3. Portion the mixture using a tablespoon or cookie scoop and roll into 1½-inch meatballs. Place on the prepared baking sheet, leaving space between them. Lightly spray with olive oil.
  4. Bake for 18-20 minutes, or until golden brown and cooked through (internal temperature of 165°F or 74°C).
  5. While meatballs bake, peel and chop potatoes into 1-inch chunks. Boil in salted water until fork-tender, about 15-20 minutes.
  6. Drain potatoes well and return to the hot pot. Let sit for a minute to steam off excess water.
  7. Mash the potatoes with butter and milk until creamy. Season with salt to taste.
  8. Steam the broccoli florets until tender-crisp.
  9. Assemble the bowls: start with mashed potatoes, top with turkey meatballs and broccoli. Drizzle with gravy or BBQ sauce.
