Ingredients
Scale
4 slices of your favorite bread (sourdough or whole grain works well)
1 cup fresh ricotta cheese
1 cup mixed berries (strawberries, blueberries, raspberries)
2 tablespoons honey or maple syrup
1 teaspoon vanilla extract
A pinch of salt
Fresh mint leaves for garnish (optional)
Instructions
In a bowl, combine the mixed berries with honey or maple syrup, vanilla extract, and a pinch of salt. Gently toss to coat. Let the berries sit for about 10 minutes to macerate.
While the berries are macerating, toast the slices of bread until golden brown and crispy.
Once the bread is toasted, spread a generous layer of fresh ricotta cheese on each slice.
Spoon the macerated berries over the ricotta, allowing the juices to drizzle down onto the toast.
If desired, add a few fresh mint leaves on top for added flavor and color.
