- 4 large onions (preferably yellow or white)
- 4 cups vegetable broth
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- ½ teaspoon cayenne pepper (adjust to taste)
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons fresh parsley, chopped (for garnish)
- Peel the onions and cut off the top and bottom. Leave them whole for boiling.
- In a large pot, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant.
- Stir in the smoked paprika, ground cumin, cayenne pepper, salt, and black pepper. Cook for about 1 minute to release the flavors.
- Pour in the vegetable broth and bring it to a gentle simmer.
