A delicious and healthy twist on traditional pizza, this Zucchini Pizza Casserole combines your favorite pizza flavors in a single, hearty dish. It’s a low-carb and easy way to enjoy pizza night.

Ingredients

  • 2 medium zucchinis, thinly sliced
  • 1 pound ground beef or Italian sausage
  • 1 cup marinara sauce
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Optional: Pepperoni, olives, mushrooms for topping

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. If using meat, brown it in a skillet over medium heat. Drain any excess grease.
  3. In a bowl, combine the marinara sauce, Italian seasoning, garlic powder, salt, and pepper.
  4. In a greased 9×13 inch baking dish, layer half of the sliced zucchini.
  5. Spread half of the marinara sauce mixture over the zucchini.
  6. Top with half of the ground meat (if using) and half of the mozzarella cheese.
  7. Repeat the layers with the remaining zucchini, sauce, meat, and mozzarella cheese.
  8. Sprinkle the Parmesan cheese over the top.
  9. Bake for 25-30 minutes, or until the zucchini is tender and the cheese is melted and bubbly.
  10. Let the Zucchini Pizza Casserole rest for a few minutes before serving.

  • For a “crustless” pizza casserole, ensure the zucchini slices are thin enough to cook through.
