Ingredients

Scale
  • 1 lb ground beef
  • 4 medium potatoes, peeled and diced evenly

  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • ½ cup milk or heavy cream
  • 1 teaspoon paprika

  • ½ teaspoon black pepper
  • ½ teaspoon dried thyme or oregano
  • 2 cups shredded mozzarella or cheddar cheese

Instructions

  1. In a skillet over medium heat, cook the ground beef with chopped onion until browned. Add garlic, paprika, salt, pepper, and herbs. Drain excess grease if needed.
  2. Lightly grease the inside of your slow cooker insert.
  3. Add half of the diced potatoes to the bottom of the slow cooker. Spoon half of the beef mixture on top, then sprinkle with half of the corn.

  5. Pour the beef broth and milk or cream evenly over the top without stirring.
  6. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours until potatoes are tender.
  7. Sprinkle shredded cheese over the top. Cover and cook for 15–20 minutes more until melted.
  8. Turn off heat and let rest 5–10 minutes. Garnish with chopped parsley before serving.
